Ingredients

1 cup flattened rice/poha, 2 tbsp cooking oil, 1 tsp mustard seeds, 1/2 tsp cumin seeds, 1 tsp fennel seeds/saunf, 1 tbsp raw peanuts, 1/2 tsp ginger (grated), 2 green chillies (finely chopped), 7-8 curry leaves, 1/2 tsp turmeric powder/haldi, 1/2 tsp red chilli powder, salt to taste, 1 tbsp sugar

For garnishing

2 tbsp coriander leaves/dhania (finely chopped), 1 onion (chopped), 1/4 cup Pomegranate seeds

How to make

Clean dry poha and then wet poha by sprinkling water over it. When poha completely soaks water then add sugar and salt in the poha itself and mix it properly. Now, in a kadhai, heat oil and add mustard seeds. Once they start to splutter, add peanuts and saute them for a minute. After a minute, add green chilies and curry leaves and cook it until the onions turns a little brown. Then add fennel seeds, grated ginger, turmeric powder, red chilli powder and cook it for few seconds. Add the poha and mix everything well. Cover the Kadhai with a lid and cook on low heat for 5 minutes. Turn off the heat and garnish the poha with chopped coriander leaves, onions and pomegranate seeds. Delicious Indori Poha is ready.
You can also sprinkle some namkeen sev over it. Enjoy Indori Poha with tea or coffee or milk.
