When it comes to evening tea, you always look a tasty snack to accompany it. Sometimes, you try western cuisine while many times you stick to desi Indian snacks. Samosa is one of the likeable snacks of Indians. People go to market to buy this tasty snack. Although it's deep fried but it tastes delicious. You can enjoy it with meethi chutney or green chutney or tomato ketchup. To make samosas, you need maida, potatoes and various kinds of herbs and spices. In fact, making samosa doesn't require much of your efforts. Follow this recipe and learn to make delicious samosa at home.

Ingredients

For stuffing

500 gm potatoes (boiled, peeled and chopped) 1/2 cup ghee, 1 tsp cumin seeds, 1/2 tsp turmeric powder, 1/4 tsp red chilli powder, 3 green chillies, 2 tsp ginger, 1 lemon, 1 tbsp coriander leaves, salt to taste, 1/3 cup green peas, 2 tsp chaat masala powder, 1 tsp fennel seeds, 1/2 tsp garam masala, 2 tbsp chopped cashew nuts

For dough
500 gm maida/refined flour, 2 tbsp ghee or oil, 5 gm ajwain, salt, water, oil for deep frying  

How to make
In a bowl, take maida, oil, salt and ajwain. Mix them all for dough and rub thoroughly. Sprinkle water and make hard dough. Set aside for about 10 minutes. Divide the dough into round portions as per the size of the samosas required.

First, chop green chillies, ginger and coriander leaves. Now heat the ghee and add cumin seeds.  When it starts crackling add ginger and fry. Add green chillies, coriander, turmeric powder, chilli powder, salt, lemon juice and green peas leaves. Mix all and cook for five minutes.  Mix in potatoes, chaat masala powder, fennel seeds, garam masala and chopped cashew nuts and mix well. Stuffing is ready. 

Roll each portion of dough into a thin oval shape cut into 2 semi-circles. Take one semi-circle and apply water on the straight edge of the semi-circle. Hold the semi-circle in your hand, fold the straight edge, bringing together the watered edges, seal the watered edges into a triangular pocket. Now stuff the potato mixture and then seal the upper edges. Make all the samosas in the same manner. Deep fry in hot oil till golden brown. Delicious Samosas are ready to eat and serve hot.
