Dosas are very popular South Indian dish. Multiple kinds of dosas are available under South Indian cuisine. You also love to eat rava dosas. Rava dosas are very crispy and made of onions, semolina, green chillies and coriander leaves. These take less time in cooking. Learn to make crispy Rava dosa easily in your kitchen with this recipe.

Ingredients

1/2 cup semolina/rava, 1and 1/2 tbsp maida/all purpose flour,1 and1/2 tbsp rice flour, salt to taste, 1 and 1/2 tbsp oil, 1 tsp cumin seeds/jeera, a pinch of asafoetida/hing, 3 to 4 curry leaves, 1 and 1/2 tbsp finely chopped coriander leaves (dhaniya), 2 tsp finely green chillies (finely chopped), 1/4 cup onions (finely chopped), oil for greasing and cooking

How to make

Take semolina, plain flour, rice flour, salt and 1 cup of water in a bowl and mix very well till no lumps remain. Again add 1 more cup of water and mix well. Keep aside. Now take small non-stick pan. Heat the oil in it and add cumin seeds. When cumin seeds crackle, remove the pan off the flame and add asafoetida and curry leaves. Add this to the prepared batter. Add coriander leaves, green chillies and onions and mix well. Take a non-stick tava and heat it. Grease it lightly with oil and sprinkle little water on it and wipe it off gently using a muslin cloth. Take half cup batter and pour it evenly on the tava. Smear a little oil in the holes of the dosa and cook it on a high flame till it turns golden brown in colour. Fold dosa over to make a semi-circle or a roll.  Repeat with the remaining batter to make more rava dosas. Serve immediately with sambhar and coconut chutney.
