In India, no celebration or occasion is complete without sweets. So, how is it possible to celebrate the festival of holi without sweets?  For this festival of Holi, gujiyas are prepared at home. Made of all purpose flour with filling of sugar, raisins and mava, gujiyas are ultimate delight to your tongue. Few like to coat it in sugar syrup while few add sugar in mava filling. Both the ways of cooking offer different flavour to the dessert. You can make it as per your choice. Check out the recipe of gujiya and make your Holi really sweet and lovable.

Ingredients

For the dough
2 cups all purpose flour, 5 tbsp ghee, water to mix

For the filling
1 cup mava, 2 tbsp of sugar, 1 tsp green cardamom (powdered), 1 tbsp almonds (finely chopped), ghee (deep-frying)

For the syrup
1 cup sugar, 1 cup water

How to make
Take all purpose flour, water and ghee together in a large bowl.  Knead stiff dough with all the ingredients. Keep it aside for half an hour.

For the filling    

Now heat the pan and heat mava over medium heat till it looks slightly fried. Take it off the heat and allow it to cool. When it gets cooled then mix in the sugar, cardamom and almonds. Now take a portion of dough and make ball of it.  Roll it out in small circle. Wet the edges of circle with water and place a piece of filling over one half.  Fold the other half over and press the edges together to seal. Now to seal the edges, either cut off the edge with a fancy cutter or make a design by pinching and twisting all along the sealed edges.  Make gujiyas from dough in same manner.  Meanwhile, heat ghee in a kadhai. When ghee is hot enough, drop gujiyas in it. Turn them over and lower the heat to medium. Fry till golden brown on all sides. Take them out. Now prepare sugar syrup of one thread consistency by cooking water and sugar together. Dip the Gujiyas in it and take them out. Put them on a plate. Serve delicious Gujiyas on plate and enjoy.
